It is my favorite time of year in Glen Arbor! The harvest is rolling in at the Glen Arbor Farmers Market (Tuesdays from 9 a.m. to 1 p.m. at the Glen Arbor Town Hall). And the still sunny days that make July slip by are starting to mix with the wild waves on Sleeping Bear Bay that signal cooler days ahead. Those days were on my mind when I gathered the ingredients for the best pot roast ever and paired it with Glen Arbor Wine’s Farmstead Red. Glen Arbor Wines is around the corner from the market at 5873 S. Lake Street, so after you pick up the rest of the ingredients come on by for a bottle (we open at noon)!

Glen Arbor Farmers Market & Glen Arbor Wines Pot Roast

Ingredients

3 pound Olmsted Leelanau Piedmontese chuck roast (make sure to ask owner Craig Olmsted about the fabulous beef he sells!)

3 Tablespoons Wondra quick-mixing all-purpose flour

3 Tablespoons olive oil

2 large onions, sliced in wedges

1 cup Glen Arbor Wine’s Farmstead Red wine

3 cloves garlic, peeled

3 fresh thyme sprigs

2 fresh rosemary sprigs

2 bay leaves

2 Tablespoons tomato paste

2 Tablespoons Worcestershire sauce

6 young carrots from Second Spring farm, washed but not peeled, carrot tops trimmed but still on

Salt and freshly ground black pepper, to taste


Method

  1. Preheat oven to 325°F.

  2. Season roast with salt and pepper and sprinkle flour over roast until evenly coated.

  3. Heat olive oil in a large Dutch oven over medium-high heat. Add roast and sear on all sides until deep golden brown, about 5 minutes per side. Remove roast to a plate and let rest.

  4. Add onions, garlic, thyme rosemary and bay leaves.

  5. In a bowl whisk together Farmstead Red wine, tomato paste and Worcestershire sauce and pour over the meat.

  6. Bring to a simmer, cover, and place in the oven. Roast, covered, for 1 hour 45 minutes. Meat will become tender but won't yet be falling apart.

  7. Add carrots to roast, cover, and return to the oven. Cook until roast pulls apart easily and vegetables are tender, 1 1/2 to 2 hours more.

    Serve with sliced oven-roasted potatoes. Pair with Glen Arbor Wines Farmstead Red wine.
